Brewing Recommendation – Getting the Best from Your Zheng Shan Xiao Zhong

These black teas are robust and forgiving, but following a few simple guidelines will bring out their best flavours.

Gongfu Style (for layered complexity)

Steps:

1. Warm the vessel – Rinse with boiling water and discard.

2. Add the leaves – Place the tea into the warm vessel, close the lid, and shake gently. Open and inhale the dry aroma.

3. Rinse – Pour boiling water over the leaves and immediately pour it out after 2–3 seconds. This awakens the leaves.

4. First infusion – Refill with boiling water, cover, and steep for 3–5 seconds. Decant immediately.

5. Subsequent infusions – Add 3–5 seconds to the steeping time for each additional brew. Most of these teas hold their character for 8–10 infusions.

Western‑Style Brew (for a larger cup)

Use 3–5g of tea in a 300ml mug or teapot. Pour boiling water over the leaves, steep for 2–3 minutes, then strain. For a second cup, increase the steeping time to 3–4 minutes.
